Since there are at least a few of you here who are curious about my cooking adventures, I figured I'd post my weekly recipes to share with anyone else who's interested. @AltBronte @heathawk13

I subbed in ground turkey, could only find butter lettuce which made very small cups. Used half the sugar. They were very flavorful and fairly fast to make. Would be easy to double, just allow more time for making & cooking in batches.

Fairly fast, easy to double, so flavorful!

Easy to make 1.5x batch, just allow more time for prep (cutting all the corn off the cob takes a while). Summer corn made it very sweet.

Super easy, lentil-pepita-almond blend makes a nice savory crunch to top the sweet fruit. Served over some 2% plain Greek yogurt makes a surprisingly filling meal that tastes like late summer.

Sadly, I didn't get a picture of the whole roasted bird but it turned out really well. Stuffing entire heads of garlic into and under the bird is great. Roasting over a bed of potatoes was not new but highly recommended. A+ recipe. Moist, flavorful, and delicious. Use the lime!

The veg was less great. Cooked fast which is nice but I just thought it was lacking something. It paired pretty well with the chicken and potatoes. And I do now have a bunch of the jerk seasoning I can use later. foodandwine.com/recipes/jerk-s…

Went with an @_Oji_Pan_ favorite cut: Flap Meat for the beef. Cooked really fast once everything was prepped. The beef seemed overseasoned by itself but paired well with the corn and other toppings. I bought shitty tortillas that fell apart: never getting that brand again.

Swapped out broccoli for the broccolini; sliced the onion thin. Cooked faster than the recipe stated in our convection oven. Delicious.

Very easy, even with making the beans from dry (ah, the joys of the Instant Pot). Well received during Movie Night with options of side salad, white rice, and cornbread.

Dinner in Iowa: Anson Mills polenta with Ragu Bolongese to prove to @rocketgrlIA that 1) non-quick cooking polenta is worth it and 2) specifically Anson Mills is delicious. seriouseats.com/recipes/2016/1…

Will make again. Takes a very long time to brown the meat (far more than the 15 min stated in the recipe). And all that meat is not cheap. But it was a big hit.

They turned out well. Good spice, nice crunch, not too oily. Paired with some sauteed kale, zuchinni and pork with tomato to balance the meal.

Simple to make (using pre-cubed butternut squash). I would cut the squash smaller and more evenly so it cooked at a more consistent speed. As it was, the ratio of pasta to squash was a bit heavy and the squash/sauce didn't really permeate the dish. Would also add more sage. MOAR!

The pork got a little over done for my taste, but the flavors were good. And it was fairly simple. Would make again.

Christmas dinner: pressure cooker butternut squash risotto with sage and brown butter. Yes, the pressure cooker saves a little time. But really, not much. Risotto, as I've always made it, already isn't that hard. seriouseats.com/recipes/2014/0…

Served with a kale salad with citrus, red bell pepper (and avocado on mine) to cut the richness of the risotto...and it is very rich!

I should have cut the small squash even smaller to cook them more thoroughly, add more sage (always more sage), and maybe just skip the pressure cooker altogether. It really didn't save time, by the time it got to pressure, I would have been done cooking anyway.

Took quite a while and turned out less sticky than I anticipated. But really flavorful and made quite a big batch so there were plenty of leftovers. Could probably speed up using the Instant Pot.

Lunches this week: Make-Ahead Broccoli and Quinoa Salad
Subbed in romanesco for broccoli because it's what I had on hand. Shaving it very fine was time-consuming and likely could speed it up by using a mandolin. Other than that, came together very quickly.

Sesame (well, peanut) Noodle Salad with Shredded Chicken. Could have used more time poaching the chicken - it was one huge breast! Likely could have also done less time on the noodles. But overall, quick and tasty. The dressing has a nice spice but not too much.

Easy, fairly fast. Used farro as the grain, mustard powder because didn't have mustard seeds. Excited for the second serving tomorrow. Would like a bit more veg in it though - maybe some kale or other greens would be good.

Hot Summer Night Dinner: Peruvian Tiradito with Aji Amarillo and Lime + Pomelo Green Bean and Zucchini salad - bright, refreshing, not too spicy (used minimal aji amarillo and no bird's eyes in the salad), minimal cooking when the AC is on the fritz.

Rehydrated dry aji amarillo - didn't yield as much flesh as I hoped = sauce was a bit thin; just the right amount of heat with the salmon. Served with sweet potato.

Lunch this week: Afghan Kidney Bean Curry. Sort of like chili. I used crushed tomatoes (what I had on hand) and it let me skip the blending step. I’d try it with more mint next time and pre-grind the spices.
