I’m entering the New Wave era of my pizzamaking. Just putting random things in there and explaining it away as art. This one is 10% rice flour. What does that do? I have no idea. We’ll find out.
While the oven is preheating, I stepped out to grab some herbs. (Recognize them?) I’m really into topping white pies with a ton of herbs.

Here are mine. 1. Sour cream, mozz, smoked Sulguni, garlic, chives, garlic chives, parsley, broccoli flowers, truffle oil. 2. Reduced clam juice with cream; mozz, smoked Sulguni, garlic, clams, katsuobushi, lemon, black pepper. Home oven, baking steel, 5 min @ 550°F.
So how was the rice flour? A smooth, light feel to the dough, and a slightly crispier bake. I might try pushing it to 20% next time. Pizza!!
