What is the logic behind reciting a 'mantra' 108 times, or say 500 times, in Hindu Scriptures?
Mantra recitation is not part of Hindu “scriptures” it is part of Hindu Spiritual practice.

Mantras are all recited 108 times or multiples thereof. But when keeping count only multiples of 100 are recorded.
The reason is 100 are recited for yourself and 8 for the benefit of all other beings. So the 8 and multiples thereof are not counted.

0 = shunya - total of all possibilities, 1 = jiva, and 8 = death. 1+0+8 = 9 which is a recurring number = samsara.
Why 8 for others? Does the 100 and 8 have particular significance or just random?

Why only 8? Well you need to work on yourself before you can help others - 8 is better than nothing.

Another reason: 108 is approx the ratio of sun’s diameter to earth’s & earth’s to moon. Also, ratio of distance between sun & earth to that between earth & moon is approx 108. Scientific data as measured by today’s measurement devices seems to suggest it is close to 108 +- 5.
