In case anybody's still following the Lacroix lawsuit thing, a brief take:

linalool comes from. like. orange peels. what the fuck

(The lawsuit alleges, among other things, that Lacroix contains linalool, a "cockroach insecticide.")
Here's the thing. Linalool is a natural flavoring/scent molecule that a lot of plants make. It's a key ingredient in a lot of flowers' and fruits' aroma profiles.
Like a lot of plant scent molecules, it low-key deters insects. At very high not-found-in-nature-or-beverages-levels-because-that-concentration-is-really-freakin-unpleasant, it can kill bugs.

That's WHY plants make those molecules. To repel/kill bugs.
It's not plants' fault that we like how their anti-bug compounds smell. A lot of fruit & veggies' flavors come from chemicals the plants make to deter pests. In many cases, humans had to breed the levels down to make them edible.

Carrots, cabbage, citrus, hot peppers, etc.
Recently, household products makers realized people don't want to spray "chemicals" in their house to get rid of bugs, and preferred natural plant-based repellants. Like linalool. So they started making those plant-based repellants.
My personal fave, there's a basil oil you can use to repel fruit flies from your crops. The reason it works? Linalool in the basil oil.

Linalool also works twice as well at repelling mosquitoes as citronella candles.

That's how linalool became "a cockroach insecticide." Literally because people wanted "natural" pest control. Made from plant compounds. That humans have already been using as a flavoring ever since we invented eating fruit.
Anyway, this just goes to show the Venn diagram of

"folks who want natural sausage with no preservatives, just the natural antifungal effects of salt & spices" and

"folks who can be shocked to find out their natural organic sausage has FUNGICIDES in it!?" is a circle
