My absurdly lovely local matcha cafe has apparently stopped doing my favourite cake—which I like so much I’ve learned how to bake it—because it wasn’t popular enough. I literally don’t think I could have bought it more often without dying.
If you’re out there and you want to try it, this is the recipe that I’ve been working with, except instead of all the decoration I’ve just made a simple thin icing with toasted black sesame in it. whattocooktoday.com/totoro-black-s…
It’s a slightly odd looking cake, but it’s really light and delicious and strongly recommended.
So ends my long disgression about baking. Well except for pointing to this book that my mum got me for Christmas and is *really* great and I think influential on this cafe. amazon.com/Japanese-Patis…
If I haven’t made this clear, I *really* enjoy baking at least partly because I really really like cake. Now I will return to my normal exasperation and horror at the politics of the world.
