When graphic designers work, they put dozens of different versions side by side on a canvas. Why don’t writing apps support this? No app I’ve seen lets you keep two alternate versions of a paragraph in play, or try out a whole new take on a chapter without losing the current one.
Writing software should help with:

- I don’t like this paragraph. Let me try three different versions.

- This chapter isn’t working. Let me reorder everything without losing what I have.

- I have three different ideas for this sentence and I don’t know which one is best yet.
Maybe writing apps don’t do this well because they model the data incorrectly. A draft under rewrite is not a single sequence of text. It’s a network of different pieces that are working or not working.
