Good morning lovelies! It's Saturday morning in Oakland and that means it's time for some baking! I got up early but not early enough, so I'm making brunch and not breakfast. Anyway, let's get started!

Make milk warm enough and lets activate some yeast!

After 5 minutes we have bloom so everything else goes in with two cups flour and it all gets mixed up together. Once it's looking like a dough, it's time to add more flour and knead in the bowl until it's dry enough to knead on the counter.

It's kneading time! I'm adding flour a bit at a time until it feels about right and isn't sticking to the counter. It's about a cup more flour at the end. Eight minutes of kneading later and we give the gluten a little nap for 15 minutes. Make some coffee maybe.

After a rest Theo is gonna help me roll it out. "Generously" flour the surface and roll into a rectangle. I put some garlic and salt and pepper in some butter and spread it. My helper @shadow grated some pecorino and spicy Gouda for me. Spread butter then cheese.

Roll roll roll it up, then cut into as many buns as you can fit into a pan. The recipe says 12 but my cake pan will not hold that many 😅. I'm cutting in 8.

Into the pan and then it needs to rise another time. Have more coffee or tea and chill out a bit.

Okey! The poofening has completed and the oven is heated to 375F. These buns go in for about 20 minutes. In the meantime the rest of breakfast is being cooked up too. Bacon in the oven too and some eggs.

20 minutes later they're definitely smelling good. Out they come. Part of this complete brunch!

Fork them out of the pan and onto your plate. Gosh these are delicious 😋

Using the pecorino and gouda mean these taste like garlic bread in the best way.
