@bethmaru @sistabuttafly Started with about 2 tbsp butter and an onion (big chunks so kids can pick them out) best with garden fresh onion but it’s the *one veg I’ll use what I can get if no local onions are available.
Sweat for a few mins till translucent. /2
@bethmaru @sistabuttafly Next I added my carrots. Not peeled just scrubbed freshly picked! I like to cut mine in 2 inch lengths when they’re finger sized. Rounds if they’re bigger but early carrots usually aren’t.
Just cover with boiling water (can add salt now)
Set timer for 5 mins

@bethmaru @sistabuttafly Now add the beans. Notice the water barely covers. You’re going to keep this water (hello flavour town and vitamins!) but you don’t want so much that when you add milk later it’s all soup.
Set the timer for 5 more mins. Put the lid back on (did I say that about carrots?)

@bethmaru @sistabuttafly Okay. Time for the new potatoes! Again, just scrubbed not peeled. Fairly large chunks as we like this to feel like stew...
If you need to add a touch more H2O. Should be not quite fully covered.
Set the timer for 10 mins. Cover... give it a stir once or twice.

@bethmaru @sistabuttafly Check and make sure potatoes are fork tender. They should be *just barely or slightly under cooked. Throw your fresh peas on top (don’t stir them in) and let those babies steam (lid on) for a final 3-5 mins.

@bethmaru @sistabuttafly Final step! You’ll have less liquid now so pour in some dairy. Some variations here but I prefer homogenized 3%. (Some use 1/2&1/2 or cream for thicker soup)
Salt and pepper time!
At this point I turn of the heat and let the milk warm up from the veggies for about 5 mins.

@bethmaru @sistabuttafly Now serve that up in a big bowl! We like to offer some sharp cheddar on the side to crumble in and get melty. If you’ve got rolls or biscuits bring those!
