The fundamental principle of Manusmriti is non-violence related to meat eating. The Veda has been given special emphasis on non-violence. The Yajurveda says: -
मित्रस्य चक्षुषा सर्वाणि भूतानि समीक्षन्ताम्।
Look on all (Humans as well as Animals) with the eye of a friend.

If a human does not hesitate to cause harm to others, then he cannot follow non-violence(अहिंसा) in any sense. Manusmriti has described this very clearly.
Manusmriti 5/48 clearly state that- Meat is never obtained without having encompassed the killing of animals; hence one should avoid meat.
नाकृत्वा प्राणिनां हिंसां मांसमुत्पद्यते क्व चित् ।
न च प्राणिवधः स्वर्ग्यस्तस्मान् मांसं विवर्जयेत् ॥
नाकृत्वा प्राणिनां हिंसां मांसमुत्पद्यते क्व चित् ।
न च प्राणिवधः स्वर्ग्यस्तस्मान् मांसं विवर्जयेत् ॥
Manusmriti 5/51 says that — Those who permit slaying of animals, those who bring animals for slaughter, those who slaughter, those who sell meat, those who purchase meat, those who prepare dish out if it, those who serve that meat and those who eat are all murderers. 
Manusmriti 5/45 also says that- He, who kills harmless creatures for the sake of his own pleasure, never attains happiness.
योऽहिंसकानि भूतानि हिनस्त्यात्मसुखैच्छया।
स जीवांश्च मृतश्चैव न क्व चित् सुखमेधते॥
योऽहिंसकानि भूतानि हिनस्त्यात्मसुखैच्छया।

The Manusmriti declares one should refrain from eating all kinds of meat, for such eating involves killing and leads to karmic bondage.
