Have you seen Locust Beans in its raw state before? This is what it looks like.

I don't know a lot about the cooking Process...

But I know the seeds are often cooked & fermented to get the desired result & aroma we all love!

There are some substances in Locust Beans called "Tannins", which are highly useful for the treatment of Diarrhea in both children & adult..

Before I end this, I want you to also know that In yoruba land, there are two types of this locust Beans..

We have the "Iru Woro" & "Iru Pete"

Both are the same.

Only difference is that 'Iru Pete' has a mushy appearance while 'Woro' are whole seeds that you can bite..
It's also important that you WASH the Locust Beans before you use.. because there might be stone or sand residue left from its processing

So, how do you preserve?

For both fresh & Dry form..

*Fresh Iru can be stored in the fridge for few weeks or for months in a freezer.
*Dried Iru ofcourse can be stored in an air tight container and dropped In a cool dry place for months..

So on a scale of 1-10, how much do you like Iru??
