To begin, it’s important to remember that observation haki necessitates a clear mind to use, and during the ceremony, Sanji had every reason not to be focused
In part it was because Pudding had fallen over in a mess of tears in front of him, which is normally the thing that would draw Sanji’s full attention
But on top of that, Sanji was under the belief that he would be shot by Pudding specifically
He shouldn’t be expecting a shot from behind by the priest, but despite these hindering factors, Katakuri still foresaw him dodging
This lead Katakuri to take his own shot, thinking that he’d be able to take Sanji out himself. MEANING Katakuri’s jellybean would have to reach Sanji faster than the point blank shot from the priest
However, Sanji was still able to dodge the jellybean attack, shocking even Katakuri, who is an expert in Observation Haki. If it was something anyone with average Observation Haki could do, Katakuri wouldn’t have this reaction, it would have been expected
And this same visual effect is used when Luffy dodges Flampe’s silent needle only AFTER he’s began to see the future since he wasn’t able to dodge the previous one
So unless you think Flampe’s silent needle attack is significantly faster than Katakuri’s jellybean, Sanji dodging the attack (without future sight mind you) should be considered similarly impressive
And honestly this visual parallel should’ve been enough to convey whether or not it’s supposed to be impressive or not, but like I said, this is a thread for dummies

This theory hinges on the precedent of Zoro and Sanji often fighting opponents of the same status and rank, which was just reinforced in Wano when they both fought Yonko Commanders despite beliefs that one could fight a Yonko or a Tobi Roppo
Looking forward in the story, we can assume that Zoro will fight Mihawk at some point for the title of “World’s Strongest Swordsman” and when this happens, whether it’s at the end of the series or not, I believe this precedent will continue
