Es gibt Crespelle aus dem Buch "Italian Basics" von GU.
Das sind italienische Pfannkuchen, gefüllt mit Zucchini, Spinat und Ricotta. Überbacken werden sie mit einer Tomaten-Bechamel-Sauce.

Leider kein Schmuckstück geworden, aber lecker! Crespelle mit Tomaten-Becha...
Vegan ersetzt habe ich hauptsächlich:
- Eier 1:1 mit vemondo Ei-Ersatz. Das hat erstaunlich gut geklappt.
- Ricotta mit selbstgemachtem Cashew Ricotta.

Das Rezept darf ich vermutlich aus Copyright Gründen nicht genau aufschreiben.
Ich hoffe mit Angabe der Quelle ist es so ok. Image
