One of the best potato side dishes in the world is Pommes Anna! Beautifully light, simple to make and only using five ingredients, this should be a regular in your home cooking!
In this thread I’ll show you how to make it!
For two servings as sides, all you need is:
500g baby potatoes, 2 garlic cloves, 75g unsalted butter, 1 lemon and some fresh sage. You’ll also need salt and pepper.
Put the oven on to 170C/340F.
To get started, finely chop the sage leaves. Peel and finely chop the garlic cloves. Grate the zest of the lemon. Set all of these aside.
Using a sharp knife, a mandolin, or a slicer such as the one pictured, slice the potatoes into very thin slices. They should be semi-transparent.
You should do this onto some kitchen towels so that the excess water from the potatoes can be absorbed.
It’s worthwhile investing in the appropriate tools for the job as it’ll go so much quicker! This took around five minutes using my truffle slicer – you can get them online for cheap.
Place the 75g butter in a small saucepan over medium-low heat until it starts to foam.
Once foaming, add the sage, garlic, lemon zest, and some black pepper, and let this gently bubble for 3 minutes until fragrant and the butter begins to darken in colour. Remove from the heat.
Line a small baking dish with parchment paper.
Then, place one layer of the potatoes on the bottom of the dish, making sure they all slightly overlap one another.
Strain the infused butter from the solids into a separate bowl. Then, using a pastry brush, brush some butter over the layer of potatoes.
Add a few little bits of the garlic, lemon & sage on top of the potatoes, and then repeat with another layer of potato on top. Butter this layer, add more potato, and repeat.
Eventually, you will have used all of the potato, and the dish will be full! Each layer should have some potato brushed with butter.
Place this dish into the oven for 40-45 minutes.
After this time, you will have a delicious potato side, crispy on top and soft inside, flavoured with beautiful citrus, garlic and herbs.

For your ingredients, you need around 100g small plum/cherry tomatoes per serving, a few garlic cloves, some fresh basil, pasta, 25ml heavy cream, and some good quality extra virgin olive oil & balsamic vinegar.
Firstly, place the tomatoes into a baking dish, as snugly as they can fit in a single layer. Peel and crush a few garlic cloves and add them too. Then, pour over a lot of olive oil until they are about half submerged. Add a few dashes of balsamic vinegar.

Ingredients, for 2 burgers: 2 chicken breasts, 100g corn starch, 50g plain flour, 1 egg, and some cumin, cayenne pepper & paprika.
You’ll also need a litre of refined olive oil, avocado oil, or similar. Don’t use really high quality extra virgin olive oil – it’s too nice!
Firstly, add the flour, cornstarch, and a heaped tablespoonful each of cumin, paprika and cayenne pepper to a large bowl, along with a tablespoonful of salt, and mix together.
In a separate bowl, crack in the egg and lightly whisk.

1kg fresh tomatoes, 500g red onion, 1 knob of ginger, 150ml red wine vinegar, 250g brown sugar, paprika, table salt
Feel free to scale these amounts up or down as you wish!
To get started, get a large pot or Dutch oven.
Roughly chop the tomatoes and put them into the pot, trying to get as much of the tomato juice in too.
