One of the heartiest, most beautiful soups you can make is caldo verde, a Portuguese soup made with potatoes, onions, garlic, chorizo and greens. It’s also very simple to make!

There are only a handful of ingredients. Potatoes, onion, shallots, garlic, 1L chicken stock, kale/cavolo nero, chorizo. Also: olive oil, salt, pepper, fennel seeds. Image
As always, do your prep work first. Peel and chop the potatoes. Peel and finely chop onion and shallot. Crush and chop garlic. Remove the thick stems from the kale and roughly chop it too. Image
To cook, melt a little olive oil in a Dutch oven. Add your onion and shallot, season with salt & pepper, and cook until softened. Add garlic and fennel seeds and cook for a minute or so, until fragrant. Add olive oil as needed to keep everything loose. Image
Next, add the stock and potatoes, bring to a simmer and cook. Cook on a simmer until the potatoes have completely broken down, thickening the soup. You can use a potato masher or your wooden spoon to speed this up. While it’s simmering, add the kale. Image

Next, remove the sausage from its casing, and chop roughly. You don’t have to remove it from the casing, but I find that it have a better texture in soups if you do. Image
Add the sausage to the soup, and give it a stir, allowing it to gently infuse the spices and oil from the meat into the soup on low heat. Taste it for seasoning and adjust if necessary. Image
And now you’re ready to eat! A cheap, healthy and relatively quick meal that warms the heart and can easily be frozen and reheated. Serve with some warmed sourdough and lots of butter. Enjoy! Image
