This is for the Cheese pull lovers
Ingredients:
380g flour
300g Fage Total 5% Greek yoghurt
1 teaspoon baking soda
1 teaspoon salt

Filling :
Grated cheese

Dressing :
Parsley
1 tablespoon extra virgin olive oil
Steps:
In a bowl, combine all the ingredients until smooth and even.

Divide into 6 portions, shape into balls, and then into discs; add the cheese to the center and seal, taking care not to break it.

Roll out with a rolling pin and shape into discs about 15-18cm in diameter.

Let them rest covered for 20 minutes; after the required time, cook them.

In a non-stick pan, over medium heat, add the bread as soon as the pan is hot.

It will bubble in a few seconds; turn it every 30 seconds and after a few stirs it will completely puff up.

No Knead Artisan Bread

Ingredients
3 cups all-purpose flour
1 tsp salt
1 tsp active dry yeast
11/2 cups warm water
Instructions

In a large bowl, whisk together the all-purpose flour, salt, and active dry yeast until well combined.

Add the warm water and mix with a wooden spoon or baking spatula until a sticky dough forms.

Cover the bowl with a clean towel and let the dough sit at room temperature for 6 hours.

Dust your countertop with flour. Transfer the dough to the counter and fold it gently until it forms a cohesive ball.

Sweet Potato Olive Oil Cake

⅔ cup olive oil, plus more for oiling baking dish
1 cup cooked and blended sweet potato from 1 large or
2 medium potatoes
1 cup maple syrup
¼ cup coconut sugar
3 large eggs
2 tsp vanilla extract
1 ½ cups almond flour
1 cup gluten free oat flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
Ice cream for serving

Caramel sauce:
½ cup coconut oil
½ cup maple syrup
2 tbsp coconut sugar
¼ cup almond butter
Pinch of sea salt
To make cake, preheat oven to 350°F.

Note: I didn't show this in the video but it's best to blend sweet potato with maple syrup so it blends easier and smooths out.

In a large bowl, combine olive oil, sweet potato, maple syrup, coconut sugar, eggs and vanilla and whisk well.

Add in almond flour, oat flour, baking soda, baking powder and salt.

Fold dry ingredients into wet ingredients, mix until no clumps remain and transfer to an oiled or parchment lined 9 inch round cake pan.

Stacked Birria Quesa-Dillas

Ingredients
3-4 lbs beef chuck roast
8 dried guajillo chilies seeds + stems removed
3 dried ancho chilies seeds + stems removed
2-3 dried pasilla chilies (optional, for earthiness)
3 medium Roma tomatoes (halved)
1 medium white onion (quartered)
6 garlic cloves (peeled)
1 tsp cumin seeds
1 tsp dried oregano (Mexican if possible)
½ tsp ground cloves
2 bay leaves
1 stick cinnamon (or ½ tsp ground)
4 cups beef stock (or water)
2 tbsp apple cider vinegar
Salt + black pepper to taste
2 packages of Sargento Shredded Cheese with Cholula Seasoning
6" corn tortillas
Fresh cilantro + chopped onion + lime wedges (for serving)
Method:
Sear the beef: Cut chuck roast into large chunks, season with salt and pepper, and sear in oil in a Dutch oven until browned on all sides.

Remove from the pot and set aside.

Sauté the aromatics: In the same pot, add the onion, garlic, chilies, and tomatoes.

Cook until softened and lightly charred.

Make the chile paste: Blend the sautéed mixture with cumin, oregano, cloves, cinnamon, vinegar, and a cup of stock or chile soaking liquid until smooth.

Strain for a silky sauce if desired.

Making the best Pizza Dough

INGREDIENTS
27oz (765g) room temp water
2tsp active dry yeast
45oz (1275g) bread flour
1/3c olive oil
4tsp salt
4tsp sugar or honey

MODIFIED TO 4 DOUGHS
14oz room temp water
1tsp active dry yeast
23oz bread flour
2.5 Tbsp olive oil
2tsp salt
2tsp sugar or honey
INSTRUCTIONS
Add yeast to room temp water (if doing 8 doughs) or barely warm water (if doing 4 doughs- approx. 98°F) in a large bowl, and set aside.

Get another large bowl and weigh out the flour.

Add olive oil to the water and yeast.

Add generous amounts of the flour mixture to the water mixture 1 cup at a time (if machine mixing).

If hand mixing/kneading, pour all of the flour mixture into the water mixture.

salt halfway thru kneading to avoid killing the yeast.

Knead/mix until reasonably together, not perfect.

Double Chocolate Banana Bread

Ingredients:
3 (360g) large ripe bananas, finely mashed
11/3 cup (170g) all purpose flour
1/3 cup (40g) natural cocoa powder
8 tbsp (115g) salted butter, melted
1 large egg, room temp
1/3 cup (80g) Sour cream or Greek yogurt, room temp
1/2 cup (100g) light brown sugar
1/2 cup (100g) granulated sugar
1 tbsp (15g) vanilla bean paste
1 cup (170g) semi sweet chocolate chips + more for topping
1 tsp (5g) baking soda
Method:
Preheat the oven to 350F.

Make wet batter: In a mixing bowl peel and mash the bananas finely until smooth and not lumpy.

Add melted butter along with granulated sugar and brown sugar.

Mix well for 2 min. Crack in the egg whisk for additional 2-3 min.

Add sour cream, vanilla bean paste. Mix well and set aside
