Continuing my “fuck it all” mood, this morning I indulged in the only dish I’ve ever invented: cheese waffles. I was inspired by a hotel breakfast in Mumbai of all places. They served eggs Benedict not on English muffins but on savory waffles. Interested? Here we go: /1
You need 2 eggs (separated), 1.5 cups of buttermilk, 2 Tbsp melted butter, 1 cup all-purpose flour, 1 Tbsp cornmeal, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp salt, 1-2 cups of grated cheese (whatever you have at hand), 1 tsp dried herbs. /2

Skillet Cinnamon Rolls (I went through a cast iron cooking phase). This takes 2 hours so it’s more brunch than breakfast. Step 1 - make the dough. You need 3 cups all-purpose flour, 1 packet rapid rise yeast, 1/2 tsp salt, 3 Tbsp sugar, 3 Tbsp butter, 1 egg, 3/4 cup water. /1 Image
Combine ONE cup of flour, sugar, yeast and salt in mixer bowl and stir. Put water and butter in glass bowl, microwave about 30-50s until reaches 120-130 F. Add to flour mixture and beat 2 minutes at medium speed. /2 ImageImageImage
Add egg, mix to combine. Add one more cup of flour, then bit by bit enough flour so that the dough will form a ball. Usually that’s about 1/2 cup for me. /3 Image

I’m feeling nostalgic for Brazilian desserts from my childhood so today I decided to make ‘pavê de baunilha’ (vanilla pavé). If you’d like to attempt this decadent piece of heaven, bear with me because some ingredients may not be exactly the same. Here we go: /1
You’ll need 1 can of condensed milk, 1 egg, milk, 2 Tbsp corn starch, 2 Tbsp of sugar, 1/4 tsp vanilla extract, flavorless cookies (I’ll explain) and Cat help us, whatever we can find that’s closest to “Creme de Leite”. /2 Image
Pour the condensed milk into a pot. Separate the egg, put the yolk in the pot and reserve the white. Keep the empty can of condensed milk, it’s now your measuring cup. Add two cans of whole milk to the pot, add 2 Tbsp of corn starch, whisk it all together. /3 Image

I don’t remember to whom I promised this, but here goes the recipe for caramelized onions and Roquefort clafoutis. To serve 4, you will need: 2 Tbsp unsalted butter, 1 lg onion, 2 tsp sugar, 4 eggs, 1/2 cup flour, 1/2 cup milk, 1/2 cup heavy cream, 4 oz Roquefort, and thyme. /1
Cut onion in half and slice it. Melt butter in frying pan, add onions and cook in medium heat until softened. Add sugar, turn up the heat to medium high and cook until browned and caramelized. /2
While the onions cool, whisk together in a bowl: 3 eggs plus one yolk, flour, milk, cream and 1/4 tsp salt. /3

Summer has few redeeming qualities IMO. One of them is this Spanish sherry gazpacho. Want to try? You need 2.5lb Roma tomatoes; 1/2 cucumber; 1/2 red bell pepper; 1/2 orange bell pepper; 1/2 cup olive oil; 1/3 cup dry sherry; 2.5 Tbsp sherry vinegar; and 2 garlic cloves. /1
Peel and slice the cucumbers. Cut the peppers (half red and half orange) into strips, discarding any seeds. Peel the garlic cloves and slice them in half. Cut tomatoes in quarters. /2
Put the tomatoes in the blender and roughly chop to make room for the other veggies. /3

Anyone interested in making a tomato mozzarella tart with me? The dough has 4 ingredients: 1 stick of butter, 1 and 1/4 cup of flour, 1/2 tsp of salt and 4 Tbsp of ice water. /1
When it’s ready, the dough still looks dry but squeezed it comes together. Then it gets balled up, wrapped in plastic and refrigerated for 30 minutes. /2
Half an hour later and it’s time to roll out the dough (I suck at this part) and make it look pretty-ish in a quiche pan. Then cover with parchment paper or foil and fill it with pie weights. In the oven it goes at 375 for 12 minutes. /3
