Continuing my “fuck it all” mood, this morning I indulged in the only dish I’ve ever invented: cheese waffles. I was inspired by a hotel breakfast in Mumbai of all places. They served eggs Benedict not on English muffins but on savory waffles. Interested? Here we go: /1
You need 2 eggs (separated), 1.5 cups of buttermilk, 2 Tbsp melted butter, 1 cup all-purpose flour, 1 Tbsp cornmeal, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp salt, 1-2 cups of grated cheese (whatever you have at hand), 1 tsp dried herbs. /2
Whisk together egg yolks, buttermilk and melted butter until combined. /3
Grate the cheese. In a separate bowl, whisk together all the dry ingredients, including the cheese. Today I had a mix of Manchego, Parmesan and cheddar. Any sharp/salty cheese will do. My herbs were thyme and parsley, and I used @rubrics4life awesome bacon salt. /4
Fold the dry mix into the liquids, gently. Using an electric mixer, beat the two egg whites until peaks form. /5
Now fold the egg whites into the batter. This has to be done very gently to keep as many air bubbles in the egg whites as possible. It doesn’t have to be completely combined. /6
When you finish it should look something like this: /7
Pour about 1/4 cup in each square of the pre-heated waffle iron, and cook until golden brown. /8
You can top with eggs Benedict, salad, grilled veggies, etc. I keep mine simple with runny fried egg and sprinkled bacon salt or paprika. Variations for the batter include chopped sundried tomatoes, diced ham, bacon pieces, pretty much anything you want. #QuarantineFood /9x
