Filipino Style Banana Ketchup

Ingredients

1 chopped onion, 2 cloves garlic, 1 tsp grated ginger: fried in 1tbsp oil
2-3 ripe mashed bananas
4 tbsp tomato purée
2 tbsp sugar
120mL vinegar
120mL water
1 tsp paprika
1/2 tsp salt

Directions

🍌 Combine the ingredients in a saucepan
🍌 Bring the mixture to the boil, then simmer for 10 min
🍌 Blend using a stick blender
🍌 Taste and adjust sweetness with sugar, which might be needed according to the vinegar type used
🍌 Pour into sterilized jars

This recipe for choux pastry is slightly different than the one I posted this week: the addition of milk makes a more deeply golden, crisper pastry which stands up to a cream filling better. But use either. Filling recipe follows.

5 tablespoons (70 grams) unsalted butter
1 tablespoon (10 grams) white sugar
