So my jerk seasoning is always: soy/Worcestershire sauce, sesame oil/a neutral oil, thyme, chilies (as much as you can handle), spring onion, ginger, honey/treacle/sugar, a little water. The sugar/honey or whatever youā€™re using isnā€™t to make it sweet really; it just gives balance

Dinner prep. This has been marinading for 24hrs. Time to get some color on it before I put it in the oven to braise. Image
Meat browned, then sautƩed some onions and garlic, hella fresh thyme, brown sugar. Then added some stock and, um, Guinness. Now, to braise in the oven for ~2hrs.

First attempt: polenta and egg casserole. Made it extra herby by putting basil and rosemary, made the polenta with hella butter and black pepper.

Just cracked some eggs on this and put it in the oven.
