The list, a thread:

A week ago @TexasMonthly released their Top 50 BBQ Joints in Texas list for 2021. It only comes out every four years. There is no comparable ranking in the #bbq business or restaurant industry. Michelin stars and James Beard awards are given annually.
Other “Best of” lists are compiled by a single critic. This list is painstakingly researched, tested, and edited by a staff that take their jobs just as seriously as the folks they’re evaluating.
@leroyandlewis came out ranked as #5. Just making the Top 10 is a huge deal. Making the top 5 means we don’t only cook some of the absolute best barbecue in the state, it means we are currently defining the cusine, and that has been our goal all along.

Today, the only thing going on is this beautiful prime brisket. It has my full attention. Just over 12 pounds before trimming, probably closer to 10 now.
I’m often a salt and pepper only guy for brisket, but I’ve been digging the Meat Church rubs lately so I’m trying their Holy Cow on this one. Trimmed and rubbed down last night. On the counter now while the pit warms up.

Gelukkig gaat dat bouwrijp maken op de wijze die de onwelriekende tuinbroekenbrigade propageert: de vrouwen verdienen de kost, de (helaas niet witte) bange oude mannen roken ondertussen een sigaretje en letten op de kinderen. Image
Interessant was ook, dat het project begon met het allerbelangrijkste: het maken van een gazebo waar men comfortabel kon uitrusten van het maken van een gazebo.

TIP #1 from @ze1chef: “Source good product, don’t mess it up.” Simply, great barbecue begins with sourcing great cuts of meat. Worry less about marbling and instead seek out meat with a light pink hue, which means the cattle ate quality feed, which will yield a tastier result.
TIP #2 from @ze1chef: A thick fat cap will provide big flavor, but pros know to trim brisket a bit to create a streamlined, aerodynamic shape. This ensures that smoke will waft evenly over the meat and no parts become overly smoky. #BBQ
