We have decided to Cook Later... because 93 degrees! We're in the basement, watching on the big screen and drinking lovely French rose. Will cook when it's not quite as hot.
This is the second day of my birthday celebration (Friday). Yesterday was beignets from WYAM's truck!

Not unlike low country shrimp and grits, Matt says that jambalaya is a "what's in your fridge" dish.

OK - did you know that the white bits (not the seeds) in a bell pepper is designed by nature to give animals indigestion so that they won't eat another one. LOL! I always cut it off but didn't know why! @WhereYaAtMat @SoundExcursions
Did you know how to use a jalapeno pepper in a dish but minimize the heat? Don't use the seeds!
I use gloves but @WhereYaAtMat is going gonzo with unprotected hands!
I'm realizing just how much I learned about knifework in my years of volunteering at @pantryseattle

Ok new tip from @WhereYaAtMat :
Leave the onions alone while they carmelize. Then push them to half the pan.
Only NOW do you add celery and bell pepper
Once this cooks down, you can add the jalapeño.
Push aside again to add garlic.
