Potato Palya (ಆಲೂಗಡ್ಡೆ ಪಲ್ಯ) for Mysore Masala Dose (ಮೈಸೂರು ಮಸಾಲೆ ದೋಸೆ)
With:
A: 5 lbs of Red or White Potatoes
B: 5 or 6 large Vidalia Onions
C: 5-10 green chillies
D: Seasoning items: Mustard, Cumin seeds, Urad dal, Red chillies

E: Ginger, Curry leaves & finely chopped coriander, lemon juice, yellow (turmeric powder)

Process:
1.Cut potatoes in half and place it in large pot of hot water
2.While potatoes are cooking, cut onions (not too small)
3.Chop green chillies & ginger

Keep checking potatoes in the pot, so that it just cook right and not too much.
Hint: when potato skins start to peel off
Pour hot water out and keep cold water running through the potatoes

Time consuming & boring: Peel the skin of cooked potatoes slowly and squeeze or cut into small pieces. Once done, try to mash it potato further. 5 lbs of cooked potatoes take as much as time as listening to a short podcast (hint: podcasts or music makes it less boring)

Cooking Potato Palaya:
4.Start with seasoning (Olive oil) w mustard, cumin seeds, urad dal, red-chilles
5.Add green-chillies to your spice handling
6.Add curry leaves & chopped ginger
7.Add cut onions – roast till it is translucent
8.Add salt and turmeric powder

9.Add cooked potato and mix under low flame
10.Add 1 or 2 T-spoon of lemon juice for taste
11.Keep mixing until onions and potatoes are evening mixed
12.Potato Palya is ready to eat

For Masala Dose, potato palya is placed on one side before folding to serve

Potato Palya goes well w chapati, poori and as side dish for curry rice or yogurt rice

For those worried about inflation:
Cost of all the ingredients is <$15 dollars
$5 for 5 lbs potato bag
$5 for 5-6 Vidalia onions
$5 for all the other ingredients

Therefore, for $15, amount of palya can serve for nearly 20 people each consuming 2 dosas (Indian Restaurants charges ~$10 per Masala Dosa, so for 40 dosas is $400.
While cost for making <$50 (includes dosa batter & chatni)
