Since there are at least a few of you here who are curious about my cooking adventures, I figured I'd post my weekly recipes to share with anyone else who's interested. @AltBronte @heathawk13

I subbed in ground turkey, could only find butter lettuce which made very small cups. Used half the sugar. They were very flavorful and fairly fast to make. Would be easy to double, just allow more time for making & cooking in batches.

Sadly, I didn't get a picture of the whole roasted bird but it turned out really well. Stuffing entire heads of garlic into and under the bird is great. Simple to make (using pre-cubed butternut squash). I would cut the squash smaller and more evenly so it cooked at a more consistent speed. I should have cut the small squash even smaller to cook them more thoroughly, add more sage (always more sage), and maybe just skip the pressure cooker altogether. It really didn't save time, by the time it got to pressure, I would have been done cooking anyway.

Subbed in romanesco for broccoli because it's what I had on hand. Shaving it very fine was time-consuming and likely could speed it up by using a mandolin. Other than that, came together very quickly.

Lunch this week: Afghan Kidney Bean Curry. Sort of like chili. I used crushed tomatoes (what I had on hand) and it let me skip the blending step. I’d try it with more mint next time and pre-grind the spices.
