4 years ago yesterday, @Yo_Muchacho had our very first public test event. We invited close friends, family, other people who I knew would give me honest feedback. We asked for no money, only their honest opinion. I served what my grandparents grew up making.
Delicious red chile enchilidas. Pork green chile enchilidas. Tostadas with ground beef and refried beans. It was all really good, but it wasn't me. And the reviews reflected that. One reviewer even called my enchilada a "mexican runza."
So I went to the drawing board. I grew up with a love of smoking meats, making pulled pork and brisket. So I thought, why not combine smoked meats with tacos and tostadas. We sold almost 200 pulled pork tacos for the very first time out of my garage during Eagle Garage Sale Days
We knew it was a hit. The real muchachos was born that day. My dear friend @Shaun_49 believed in me and helped us get everything set, my business plan, projections, finances, everything! He helped set me up for success and I wouldnt' be where I am today without his guidance.
Fast forward 3 years after our first event and we are again, shifting our business model to all deliveries in the midst of a pandemic. Because of our loyal following, we've managed success in what are some really dark times.
Looking back at my original business plan when filing for PPP loans and hardship grants, I saw that my goal after 3 years was to open a brick & mortar shop. I'd often dreamed about serving my food and great drinks out of a small quaint shop outside of downtown Lincoln.
One spot, this one spot though, has always been in my mind. It just so happened that their business was booming and they were moving up and on and I happened to find out that their lease would be up so I immediately acquired about it.

Over a month ago, I sent my deposit check, filled out a liquor license application, and today, it was unanimously approved by #LNK city council.
It may seem crazy to do it in these times, but I believe because of my friends, my muchachos family, we will come out of this stronger as a new Muchachos. In our very own brick & mortar space!
Dates are unknown because of all of this Rona stuff, but we are taking over the current Method Cycles spot!
We will specialize in smoked meat breakfast tacos in the morning, breakfast nachos, turning into our normal fare for lunch during the week and expanding to dinner on the weekends! We will serve delicious margaritas, craft beers, in a modern, chill and welcoming environment.
And one of the best parts....we are parterning with our friends at @MetaCoffeeLab who will move their coffee roastery into our kitchen! So we will be providing you not only the best in smoked meat deliciousness, but also provide top notch coffee in the capital city!
This is a dream come true in the middle of a nightmare. I have hope, not because of who we are, but because of the amazing following you've provided us over the last 3 years! The Muchachos Cafe will be a place unlike any other in our city, and we can't wait to serve you!
