Who wants a quick and dirty recipe for pomegranate molasses bbq sauce?
2 tbsp of veg or canola or light olive oil plus 2 tbsp minced garlic and one finely chopped small onion
Saute lightly, allow to caramelize over low heat for 20-30 minutes adding 1/2 tbsp of kosher or slightly coarse sea salt and 1/2 tbsp of kitchen pepper
(Add 1 tsp of cloves)
Add 1/4 cup of stock of your choice, 1/4 cup of pomegranate molasses, 1 tsp of orange& or lemon zest, 1/2 tsp of cayenne pepper or red chili paste or 1 tsp of hot sauce&2 tbsp of medium agave or honey. Bring to a quick boil then allow a low and slow simmer for 10-15. Dont burn!
A healthy pinch of rosemary is a nice addition. Glaze lamb salmon or chicken with respect.
Fresh or dried
.....
Stir like you love it...not hate it
And adjust the flavor as you like....ya know. Be mindful that pom molasses is pretty tangy not cloying...
