Go to the shop and hope they’ve got the rest of the ingredients 🙄😂😂🤦‍♀️ don’t even keep sugar these days 😇
This recipe says to wash the bugs off the flowers but after reading a couple of other recipes it seems to preserve the pollen it’s best to spread them out & wait for the bugs to go, about 15 mins 😊 I’ve also done a bit of sifting by hand to encourage them out 😁 tad impatient 🙄
This recipe also says just to use the petals but again after further reading you can lose nectar by taking too much of the green part off, this is how I’m doing it. Bit of a ball ache 🙄 at least I’m sat in the sun doing it 😁
My god! That took ages! Had to stop to plant some veg but still took about 2 and a half hours 🙄😂😂
I’m using a couple of recipes cos they’re all a bit different, put the dandelion heads & lemon slices into a pan, one says to boil them for 15 mins, one says 30, I’m gonna split the difference & go for 20 mins. I haven’t bothered measuring the water, just enough to cover them 😊
Still working off more than one recipe, one says to leave to steep for 6 hours & one says to leave overnight, due to the fact I’m knackered & it’s time for dinner I’m gonna leave it overnight 🙄😂😁 I’ve covered it & left it on the side but will put it in the fridge once cool 😊
Once the mixture has steeped place some cheese cloth over a pan & pour the liquid through, try to avoid squeezing it, instead sit on a small tub to catch the last dribbles. I always strain things twice to get all the bits out 😊
Once you have the liquid strained pour into a pan, take approximately an equal amount of sugar (ie: 1 cup to 1 cup) and pour it slowly into the pan stirring as you go until the sugar dissolves 😊
Then pour the mixture into a slow cooker or simmer in a pan on very low heat to reduce. One recipe says to do this for 4 hours & another says several hours, while one says you can do it in half an hour on the stove 🤷‍♀️ I’m using the slow cooker & giving it as long as it takes 😊
Seems to be working 😁 It’s been reducing in the slow cooker for a bit over 2 hours, think it’s gonna be a late night 🙄😂 good job I don’t need to queue outside Morrison tomorrow 🙄😂😁
Just done a quick consistency test and I think it’s nearly ready 😁 Tastes bloody lovely too 😋
This is how it looks in the slow cooker when it’s ready, it took approximately 4 & a half hours, stirring occasionally, about every 20 mins to start with, then every 15 mins, stirring constantly for the last ten. Just looked & thought I had it set on high but it was on auto 🙄🤦‍♀️
Next pour the honey into jars using a ladle 😋 Does look a bit runny but it starts to thicken as it cools 😊
The finished product 😍 Made in East Yorkshire Dandelion Honey 🍯 Bloody delicious 😋 Really does taste just like honey & because it’s from local flowers (back garden) it makes the perfect natural antihistamine 😊

Here it is after it’s had chance to cool 😋 I also forgot to mention that I put a couple of drops of Organic Vanilla Bean Extract, you can taste it a little so I thought I should mention it 🙄 I added it when I added the sugar 😊 Just put some in my cappuccino & it’s yummy 😋
