Proud leftovers moment: Had potato mash and a bit of ossobuco left - slow cooked beef, mushrooms, carrots and a wine gravy with lots of bone marrow. Added flour to the mash and made gnocchi. Added cream and parsley to the stew. Mix. Sprinkle of parmesan, crack of pepper. LUNCH.
Please don’t ask me for a recipe. I gave you much more than the formula to make it. I gave you the philosophical principles to make it. :)
I’m now getting messages about how mash is “the wrong thing” with a beef stew. Apparently ossobuco only goes with such RADICALLY DIFFERENT starches as rice or polenta. 😆

For a Catholic nation, Italians really are the most hilariously Orthodox cooks.
