I think this is the "southern" view on vegetarianism

Where you have mostly brahmins and a handful of other castes pursuing it. (Max 5-8% of population)

In North India, "vegetarianism" is mass culture. There is pressure to conform for the whole society

Very different attitude
Even for castes habituated to non-veg, so many of them abstain on Tuesdays or Fridays in North India

This is extremely common

Such taboos are fewer in the South. Less strongly adhered to
Second - there are biological reasons

Linked to lactose intolerance

Vegetarianism is stronger in the North West, where lactose intolerance is relatively low

In the South and likely East, intolerance is high, barring likely a few castes of northern origin
