Quilon white sauce noodles or nouilles à la sauce blanche Quilon.
Boil noodles on low flame for 2 minutes, strain it and keep it aside.
Sauté finely chopped garlic in butter in low flame for a minute. Take one table spoon of each.
Add a table spoon of maida and keep stirring. Let it cook for another five minutes.
Add about 1-1.5 cups of milk. Keep stirring. Allow it to thicken under low flame. It would take 5-10 minutes. The key part is stirring.
Add oregano and chilli flakes (you know where to get it). Keep stirring. I've used two packets of oregano that came with pizza and one dried chilli.
Add pepper and salt to taste. Stir well. You can add cheese if you want to. I have added a slice of cheese.
Add the pre-cooked noodles. I've used Maggi, but anything would do.
You can let it cook for another 30 seconds and serve. Make sure that you serve in the cooking vessel itself to minimise the wastage of sauce. Do not forget to lick-clean the vessel and spoons, before washing.
Warning: Do not waste even a drop of the white sauce.
