First of all - Kobe, Wagyu & Prime are CLASSES of beef, not types of COWS...

There are too many varieties of cattle to mention here.

Examples: Angus, Jersey, Highland, Holstein, Hereford, Simmental and 1000 more.

Second - Kobe, Wagyu & Prime are not CUTS of beef...

Cuts refer to things like:

Ribeye, New York, Filet Mignon, Flank, Tri-tip, Skirt, Flat Iron, Porterhouse, etc...

This class of beef is from Japan - ONLY from the TAJIMA strain of BLACK CATTLE.

It’s not Kobe beef unless it comes from that certified region in Japan.✔️

It’s born, raised and slaughtered in the Hyogo prefecture, where Kobe is the capital.

Myths & Facts? ⬇️

🍺 The cows drink beer or sake to relax the muscles - Some drink beer in summer to increase appetite, but for the most part, they stick to spring water.

🎻 They listen to classical music - TRUE. It relaxes them while they eat.

💆🏾‍♂️They are massaged regularly - this is done mainly for working cows in the field with arthritis. If they do get massaged, it’s for comfort and not taste.

Why is it so good?

✔️High Marbling / Flavor (Fat in the muscle)

✔️Super Tender

How do you know it’s Kobe beef?

💰 Expensive - Around $200 per pound.

📑 Ask for the paperwork - restaurants serving it should hold the certificate, along with a 10 digit I.D. Or QR code.

“Wa” means Japanese | “Gyu” means Cow

Wagyu beef ONLY comes from one of 4 specific cows:

🇯🇵Black
🇯🇵Shorthorn
🇯🇵Polled
🇯🇵Brown

All Kobe is Wagyu | Not all Wagyu is Kobe
Difference between American Wagyu & Japanese - you ask?

In Japan, Wagyu is 💯 purebred cattle, from the 4 mentioned above.🇯🇵

American Wagyu - Any cow that’s bred with a Wagyu purebred, so half-breed.🇺🇸
How can I tell American from Japanese Wagyu?

If you see A4 or A5 attached to it...It’s Japanese✔️

🇺🇸Wagyu is not the same thing and shouldn’t be compared to the 🇯🇵 version.

The USDA has 8 beef quality grades for American beef:

1. Prime
2. Choice
3. Select
4. Standard
5. Commercial
6. Utility
7. Cutter
8. Canner

Prime has the highest quality amongst them.

Unfortunately, Prime doesn’t come close at all to Kobe or Wagyu. Image
But, a well cooked Prime steak is delicious - so let’s get into it.

A quick note on Choice:

It’s good - it can be really good. It’s most likely the beef grade your eating in decent restaurants.
Select is passable, but I wouldn’t recommend it.

Numbers 4 - 8 are usually reserved for fast food, canned chilis, etc.
I’m not trying to be a hater on USDA steak grades but...

There are other AMAZING beef producers in the USA, pasture raising cattle humanely and of high quality.

I should really be talking about those producers, but everyone has heard of Prime, so...
Why is Prime so good?

✔️Highly Marbled (Flavorful)

✔️Very Tender

✔️Only accounts for 3% of USDA beef.
Why isn’t it great?

Most, if not all of these cows, are fed a diet of grain, soy, etc.👎

Cows are supposed to eat grass.✔️🌱

They feed them the grains and soy so they fatten up and develop marbling.

That’s about all I’ve got on Prime.
Most people wont ever try authentic Kobe or A5 wagyu - because they are crazy expensive.

Most people can splurge on some Prime though, once in a while - check your local Costco.
Personally, I look for 👍🏽

Beef that’s 100% Grass Fed & Finished - Pasture Raised.

It needs to be “finished”, which means it ate grass its entire life. 🌱

Some cattle producers cheat and feed them corn & soy - the last few months before slaughter. ❌
If you’re serious about eating good quality, healthy meat:

✔️Find a farm nearest you that takes this seriously.

✔️Go there and purchase as much of one cow as you can afford.

✔️Freeze what you can.

Cast Iron cookware is old school and will always be used.

1️⃣They are the OG non-stick pan.

2️⃣They are cheap and last forever.

3️⃣You can cook pretty much anything in them.

Which one’s to buy? ⬇️
It needs to be 💯% cast iron, made from a solid mold.

There are pans out there coated in enamel and other materials. This is to prevent rust and help cleaning, etc.

Those aren’t true cast iron pans though...
