New Sweet & Spicy Chicken Wings recipe. Best made in an air fryer - wings are amazing cooked that way. But these can also be baked in an oven. Made with ginger, garlic, lemon, lime, red chilli & honey. Yum. #coronacooking ImageImageImage
Ingredients
1kg chicken wings
1 tbsp baking powder
1 tbsp cornflour
Salt & Pepper
20g butter
Juice of 1 lime & 1 1/2 lemons
3 garlic cloves
1 tbsp grated ginger
2 red chillis
3 tbsp runny honey

Serve with chopped spring onions & toasted sesame seeds. I made a dip from nonfat Greek yoghurt & pesto which was great with these. I got wings in @Aldi_Ireland They do 1kg packs of wing portions which are handy. If you buy whole wings, portion them down & discard the wing tips.
Use a kitchen towel or clean Jcloth to dry the wings. Don’t skip this step, it is important. Toss them in the baking powder, and then toss in the cornflour. The baking powder is important here, it makes the skin really crisp up. #coronacooking Image
If you are using an air-fryer & cooking the full kilo of wings, you will need to cook these in two batches. Place a layer of wings in pan of your air-fryer, leaving a little space between each one. Cook at 180c for 15 mins, then turn them over & cook for another 10 mins. Image
If you are cooking them in the oven, use same temperature and cooking times. You can cook them all in one go in the oven obviously’ just spread them out on a baking tray. The air-fryer really does cook these so much better than the oven, but if you don’t have one, this will do.
While the wings are cooking, make your sauce. Finely grate the garlic & ginger. Melt the butter in a small pan, add the garlic & ginger when the butter starts to bubble. Turn the heat down a bit and sauté for 2-3mins. #coronacooking ImageImage
Deseed & finely dice the red chilli. Add to the pot, sauté for another 3mins or so. Add the lemon & lime juice and finally, the honey. Bring to a boil then reduce to a simmer. Let it cook away until it reduces to about half its volume and is nice and sticky. Set aside. ImageImageImageImage
When your wings have had the full 25 mins, take them out and toss them in some salt & pepper. Put them back in the air-fryer, or oven. They can all go in together this time rather than in batches. Cook at 200c for 6 mins until they are dark, golden and really crispy. ImageImage
Toss the wings in your sweet chilli sauce, along with half the chopped spring onions. Plate up, finish with the last of the spring onions and sesame seeds and dive in. #coronacooking ImageImageImageImage
I made a dip by mixing 2tbsp of pesto with 250g of nonfat Greek yoghurt. You could use feta or blue cheese instead if you wish. Just blitz cheese & yoghurt together & serve on the side. The pesto was really convenient though. I didn’t have any cheese, so it worked a treat. Enjoy. ImageImage
