I’ve reworked a recent recipe, and it is a triumph if I do say so myself. New and improved - Salted Caramel & Pear Brownie. This is beautiful. If you liked my first effort, you will absolutely adore this! #coronacooking
Ingredients
2 eggs
100g caster sugar
1/2tsp vanilla essence
100g dark chocolate
50g salted butter
100g ground almonds
1 pear

Salted caramel
100g caster sugar
45g salted butter
60ml cream
1/2tsp salt

Make the caramel. Put the sugar in a pan over a medium/high heat. Watch it carefully. When it begins to melt, stir until it is totally liquid & turning brown. Cut the butter into 6 pieces & add it a piece at a time, stirring constantly to combine it with the sugar.
If it starts to separate, take it off the heat & stir until it comes back together. Keep adding the butter until it is all melted & combined. Now slowly add the cream, stirring constantly. Add the salt at the end, stir to combine & set aside for now. #coronacooking
Heat oven to 160C fan. Melt & combine the chocolate & butter for your brownies in a bowl over a pan of boiling water. Stir to combine as it melts, when it’s fully combined, take off the heat & allow to cool a little.
Separate the eggs. You only need the whites for this recipe, a meringue mix is the basis of this new recipe. Whisk the whites until they are stiff with nice peaks.

With mixer still running, gradually add sugar a little at a time in batches, until you have a glossy, stiff mixture. Don’t over whip it though, you want a creamy, smooth mix with stiff, glossy peaks.
Stir ground almonds into the chocolate & butter mixture in a big bowl. Peel & core the pear, cut into 1cm chunks. Fold 1/3 of meringue mix carefully into the chocolate/almond batter. Now fold in another third, folding it in carefully, & the final third until it is fully combined.
Finally fold in the pear & 4 tbsp of the caramel. Line a small baking tray with grease proof paper. Spread in the brownie batter evenly across the tin. Bake for 25 mins. Allow to cool fully before slicing into portions. #coronacooking
Finish with a little of the salted caramel and a little coarse sea salt. Honestly, these really are very special. Give them a go. You will not regret it.
