The TikTok kids are posting pictures of pancakes to overwhelm the #MillionMAGAMarch hashtag. I made scallion pancakes this morning, so here’s my Chinese American contribution!
Recipe:

2 cups flour (I prefer bread flour)
1 tsp salt
3/4 cup boiling water
1/4 cup cold water
4 scallions, chopped
6 tbsp vegetable oil (I use peanut but canola is fine)
2 tbsp toasted sesame oil

Instructions:
Mix together flour and salt. Add boiling water and mix until dough is shaggy. Add 1/4 cup cold water and bring dough together. Knead on floured surface around 3 minutes until smooth and elastic. Place in bowl and cover with damp towel for 30 minutes. Mix together vegetable oil...
... and sesame oil in small bowl.

Knead dough a few times and then cut in half, roll one half out to the size of your large frying pan. Brush with a bit less than half of the oil mixture, being careful not to go too far to the sides.. Add half of the chopped scallions...
...and roll into a tube, starting at one end of the dough and rolling carefully, not so hard as to squeeze out the oil. Form a coil with the rolled log and then flatten with your palm, then roll out in a lat circle again. There should now be layers of scallions and oil...
...in your dough.

Heat pan on high and brush will a bit of the oil mixture, fry on each side until brown and crispy, a few minutes each side depending on your heat. Sprinkle with more salt if you’d like.

To make a dipping sauce...
... mix a bit of the oil mixture with 1 tbsp rice vinegar, 1 tbsp soy sauce, a pinch of sugar, and some chili oil. I use Laoganma brand roasted chili paste, available on Amazon. The pancakes are delicious without any sauce, too!

Okay, so let’s talk electors. I’ve seen a lot of folks post asking whether there will be “faithless electors” who could swing the tally, about the nightmare scenario where GOP-led legislatures in the swing states go against the will of their voters and seek to appoint... /1

Need some good news? Biden’s lead in GA has grown to 12,338 votes after another 1,314 votes came in. He is going to carry the Peach State by a margin no recount can possibly overcome. That gives him 295 E.C. votes even without Arizona (which will give him 306 when he wins it) /1
If you’re still feeling anxious, consider this: There are just too many states that have gone over to the blue column for any amount of lawsuits, state level shenanigans, and bogus claims of fraud to overcome. /2
Nevada. Michigan. Wisconsin. Pennsylvania. Georgia. And soon Arizona. The electoral count is the same as Trump’s win in 2016, on top of a commanding popular vote win over more than 5%.
