In general the python support in the amplify cli is lacking and does bundle more than what you want via its usage of pipenv

Although the same could be said for JavaScript support bundling the dev dependencies in the lambda runtime creating bloat or workarounds (which actually makes things worse)

Amplify docs should maybe not recommend users go down the route of using "amplify add function" until the language specific issues are resolved
Not even lambda layers are fully supported if you run into this like this

Regarding python AWS SAM works, maybe use this by default. Otherwise please at least try to implement a more significant example of amplify using multiple python functions and datasources etc..
@heitor_lessa can maybe also weight in on his experiences on why SAM was needed for all of the lambda function
