Let’s make late-lunch holiday chicken. Is a holiday really a holiday if you don’t make chicken?

These are enough for 1/2 a chicken.
Blend all the listed ingredients. Add some water gradually to make blending easier.
Marinate the chicken for a couple of hours, covered. The longer, the better.
Meanwhile, let’s make the plantains real quick.
Slice the plantains, sprinkle some cinnamon and shallow fry them until done.
This one is short and precise.
Once the Chicken is done marinating, oil a pan on high heat. Sear the chicken on each side to get a nice char. Add in fresh garlic, rosemary and 1 tablespoon of butter.
Then bake for 20 min at 180 degrees. Take the heat up to 200/220 for the last 5 min.
No oven? No worries.
Cover and cook on med-low heat until done. You can also divide the chicken into smaller parts to help cook faster.
