Vitamin A is required for vision and integrity of epithelial cells (in mucosa/hollow organs). If Vitamin A is less, it can lead to permanent blindness. Retinol or preformed vitamin A is found in butter, ghee, whole milk, curd, egg yolk, liver etc. (2)
Liver oils of fish like cod, halibut, shark and saw fish are the richest natural sources of the vitamin. It is completely absorbed by the body. (3)
In vegetables, there is no retinol but they have carotenes or provitamin A which get converted to Vitamin A in the body. There are alpha, beta and gamma carotenes. When beta carotene is converted into retinol in the body, the efficiency of conversion is low. (4)
Sources of beta carotene are green leafy vegetables, spinach, amaranth, coriander, drumstick, curry leaves, mint, radish leaves, mangoes, papaya, tomatoes, carrots, yellow pumpkin. (5)
Only 50% carotene in vegetable foods gets absorbed. One unit of beta carotene yields only 0.25 units of retinol (even less for other carotenes), so requirement of Vitamin A sources from vegetarian food is 4 times more than from animal sources. (6)
