I had some leftover steak in the freezer and decided to make an experiment. These are some nice pieces of ribeye. 20 day dry aged and then dry brine for 24hrs.

The meat looks good, a tiny bitsy drier than the ground beef you get at supermarket but I expected that.

I'm gonna use my trusty burger press to form nice round... burgers.
I was a bit worried if drier patty would not stick to the press or if the burgers won't fall apart but no, we're golden! /5
