Men lie constantly and instinctively about attractiveness. They want to flatter and be polite. And many don't want to publicly admit they like the look of big fakes. They're afraid you'll judge them for it.
Drywall isn't as bad as attached garages. But there are still two big problems with it:
1. If you accidentally touch it you realize your walls feel like cardboard.
2. It has no texture. Flat things are boring. Even subtle texture makes surfaces more interesting.
I'm not saying drywall should be banned, but I am accusing people of not trying hard enough, and being unimaginative.
Can we not try to do better at least SOME of the time?
I prefer masonry, naturally. But for a house made out of sticks instead of stones, shiplap is an economical alternative to plain drywall. Too many people unfairly dismiss it as a gimmick.
