Didn't get the job at Panda Express😄but I'm gonna show you real quick how to make a sweet chili sauce, but better. I'll even put it up against theirs. 🧵👇
You can do this a lot of ways, but here's one:
- 4-5 Small sweet red or mild peppers (I add in a few Thai hot chilis from my back yard, but it's not necessary)
-6-7 cloves garlic
- 1/2 cup water
- Blend just until you have a paste. Don't over mix.
- Add mix to a small pot.
- Add 1 cup of sugar (you can use other sweeteners, but the consistency will change a bit)
- 1/3 cup of vinegar (typically white vinegar. I used ACV)
- Pinch of salt
- Fish sauce is optional ( I don't use it, but it's common)
- Bring to a mild boil.
- As mixture comes to a boil, add a slurry of 2 tbsp tapioca or corn starch with equal parts (2 tbsp) water.
Reduce heat & simmer, stirring frequently around sides.
I added a few cloves while simmering.
Sauce should reduce & thicken in a few minutes.
Let cool, and serve.
SUPER simple, fresh and always a hit.
NO cream. NO butter. No worries.

I'm not going to give exact measurements, because it's important to feel this one out.
-1 lemon (with zest) for every 2 servings. These are from my garden, so I don't need to scrub them, but you might want to.
-Fresh mint
-Freshly grated Pecorino Romano and /or Parmigiano Reggiano
-Pasta ( I suggest thin long noodles and not a pasta with a lot of ridges. I'm using Bucatini.
-Basil is optional. (My plants are fully picked, so I'm not using it.)
In a medium pan on low heat, infuse some olive oil with a bit of your lemon zest and some mint/basil stems. IMPORTANT: Do NOT COOK this. You are simply infusing the oil a bit as your water boils.
As you start to smell the fragrance, add some lemon juice, cheese and salt if you like. If you're going to add black pepper, do it after you cook, as black pepper can get bitter in the pan.

In here goes:
3 cups whole milk 1/4 cup butter
2 zested lemons
(I'm using 2 tbsp lavender & allspice, but just a cinnamon stick will do well here. I didn't have one lol.) 1/2 tsp salt
Bring to boil, then lower heat. Strain. On low, whisk mixture with 1 cup sifted semolina flour.
In separate bowl, mix eggs & 14 oz. ricotta.
As semolina mixture cools, add slowly to egg/ricotta mixture and mix until combined. This went in a 9 inch springform pam. Paper lined on the bottom and buttered on the sides.

I got this Wagyu sirloin (.61 lbs.) for around 13 bucks, so I will be using this, but roughly 1lb. of flank steak will do just fine. Slice thinly against the grain and place into bowl.
Velveting your meat with corn starch and a pinch of baking soda & liquid makes ALL the difference in creating a moist, tender meat, especially with rougher cuts. This marinade also has fish sauce, oyster sauce, Shao Hsing wine, light soy sauce, lime, salt.
