One is legal, the other illegal.
Corporations like Starbucks etc hire the finest tax professionals to help them be efficient in managing their tax expenses, make the most of taxation rules.
They play by the book. They're not stupid. They also hire the finest legal advisors to protect themselves from any litigation from governments.
That you see them pay little tax is because it is ALLOWED by the tax rules.
They need every resource available to run their business.

The Japanese people have a culture to avoid 'meiwaku' which means trouble, nuisance. They don't like to trouble others, so are usually mindful of own actions that could affect others.
This can be observed almost everywhere and in everything they do.
Japan is very clean everywhere because they don't litter despite trash cans are hard to find. They don't wanna trouble others cleaning up.
They can queue very obediently to not be unfair to anyone, again avoid troubles for others.
And of course they'd bust their own trays.
