Io Saturnalia!
I cooked some Ancient Roman recipes for us and two friends so that we could celebrate Saturnalia with a mini feast. Lots of wonderfully strange and alien flavour combinations packed with the ever-present asafoetida and fish sauce. We had: 🧵
Minutal Matianum (Pork and Meatballs with Apples): Roasted pork diced, meatballs, and sweet apples cooked with leeks, cumin, coriander, mint, asafoetida, saba grape must, honey, white wine vinegar and chicken stock.

I made a mini medieval feast for us and a couple of friends from the 14th-century English cookbook, 'The Forme of Cury'. And I wanted to try 3 that made use of spices from around the globe - galangal, ginger, clove, nutmeg, cinnamon - showing the complexity of medieval cuisine.
- Beef Slow Cooked in Spiced Wine (Should be venison or porpoise, but alas). Fry your venison, dolphin or beef with chopped onion. Add powder forte (cloves, nutmeg, long pepper, black pepper), ground breadcrumbs, salt, wine, vinegar, and broth (water or stock).
