K. You can make a really delicious and nutritious vegetable soup that rivals fancy restaurant soup by rough-chopping a couple onions, peppers, 3 cloves of garlic and just about any combo of vegetables (sweet potatoes, squash, cauliflower, parsnips—anything!).
Sautée them in a little olive oil, add lots of salt, pepper and random spices (literally anything!). When they’re a bit softened, cover with chicken/vegetable both, bring to a boil, simmer till soft. Blend with a immersion blender. The result will blow your damn mind every time.
