Thread - Most polished white rice used in India are high GI causing blood sugar to spike. To reduce the spike, look for either rice with naturally occurring resistant starch or change the nature of the rice to increase the resistant starch. Typically carbs are digested in the + small intestine and converts into glucose. Resistant starch is a type of carb which is not digested in small intestine (so no glucose) and passed on to large intestine where it is fermented. A young boy, relative, completed his engg and setup a goat farm with Boer goats (South African Breed). He comes from a family of Businessmen. He said it is lucrative.1 Boer goat goes for 50,000 rs+. Per kg price of Boer Goat in Indiamart+online sites - rs 2000+/kg. Used to hang out with an anna when visiting my mom's village. He had lands but tended to some 200+ sheeps and very few goats. Thread - Historically Indians were using cold pressed edible seed/vegetable oils. Then they started messing with these oils around the time they were messing with the rice (started Polishing). In 1930s, they started started converting unsaturated fats in the oils to saturated - a process called hydrogenation i.e. Dalda aka artificial ghee aka vanaspati. Around this time, they started replacing cold-press & filter method with solvent extraction & refining. Solvent extraction using hexane gave 99% oil from seeds vs 85% with cold-press. Rice polishing which became popular in 1960s is the biggest armageddon descending on the rice eating population. The layer below the husk in the rice called aleurone & layer below, subaleurone contain protein, fat, minerals, vitamins, fibers. Below it is the soft layer which contains only starch (carb). By polishing the aleurone layer to make the rice soft and tasty to eat, the fiber, resistant starch, 'many' minerals, vitamins were lost.
