I was reading something about piccalilli the other day: how it developed from origins in India in two distinct ways in UK and Japan. Japan continued with lacto fermentation where as the first English recipe (Elizabeth Raffald) used alegar (presumably ale vinegar) ¿Similar to the different journeys curry sauce has taken?

UK: Spiced up gravy
JP: Spicy miso / dashi based sauce. MSG in curry sauce.
