Mankind uses a lot of weapons, including thumbtacks, kendo sticks, steel chairs, heck anything he can get his hands on.

Also, he has a steed.

Knight's horses were trained to box. They knew how to fight. However, Don Quixote's horse has had no such training. Still, its a large animal, and horses naturally
@WhoWouldWin13 box and bite anyway. Mankind has never faced a wrestler the size of the average horse (800-1000 pounds). Not even Big Show is that big! Combined with a crazed "knight wielding a broadsword and a lance, one whose covered in knight's armor?
