2 aspects here - either our sthapathis are too good to remember all the sastras in detail or our ancestors were excellent in making a blue print.
Without these two its impossible to give physical layout.

Still more difficult is last stage...
2 aspects either its sculpted standing or laying on the ground. Standing takes lot of energy. So most of the times it I sculpted laying on the ground
When one side is sculpted laying on the ground, to shift to next side, you should roll the pillar.
But
So how did they finish the work so carfeully?
After finishing the work, how did they lift and place it without break in intricate art on it?
This needs meticulous pre planning and blue printing.
In the pillar shared by @truejainology the brackets are sculpted seperately and then fixed.

Imagine the number of people working for this act at a time.
