Okay, many of you remember my hubby and I made our house into a fake Disney theme park for our anniversary (with a lot of help from you guys!). We made fake rides and decorations and made faux park meals from the actual Disney recipes. It was a blast.

So, the highlights of the food was Adventureland night, where we made perfect Dole Whip Floats, and our favorite Disneyland meal, the Chieftan chicken skewers from Bengal Barbecue. We love them, but on busy days, the lines can be LONG. 2/
But we found a recipe that tastes almost exactly like the ones in the park.

It’s a bit complicated, it requires both a marinade and a sauce. But holy heck, it feels like you are right in front of the Indy ride in the shade of Tarzan’s treehouse.

Here’s how to make them. 4/
First, you make the marinade.

1 c. Teriyaki Sauce,
1 c. Soy Sauce,
1 T. Red Wine Vinegar,
1 c. Brown Sugar,
1/2 c. Sherry Cooking Wine,
2 whole Bay Leaves,
1 T. Ground Black Pepper,
3 T. Fresh Ginger Root,
2 T. Fresh Garlic

This is the Tonkatsu sauce, put small strips or cubes of boneless chicken on skewers, we used metal so they don’t burn but wood is fine if you soak them. We found thigh meat stayed moistest.

Then put them in the marinade, turning them regularly, in the fridge...3 hours min.

Then you make a Tahitian sauce, and pour that over the chicken while grilling, a bit more each time you rotate the skewers.

4 Whole Cloves,
1 T. Red Wine Vinegar,
1 c. Ketchup,
1/2 c. Crushed Pineapple,
1/2 c. Pineapple Juice,
1/2 c. Brown Sugar,
1/2 c. Soy Sauce,
1/4 c. Orange Juice Concentrate,
3 T. Water
Simmer Cloves in vinegar for 5-10 min. Strain cloves & add other ingredients.

Bring to boil over medium heat, pour over the skewers.

Rotate until cooked, don’t overcook or they’ll dry out fast.

The smell will put you right back in Adventureland.

We served them with lemon citrus veggie skewers, and Jasmine rice with chives from my garden, and grilled pineapple.

They were incredible, I might even say they were better than the ones in the park.

The recipes above make for quite a bit of extra sauce, so the next day we made rice bowls, and they were incredible.

Again, the taste was nearly identical to Bengal Barbecue.

There are lots of step by step videos out there, but this is pretty easy, apart from the variety of ingredients.

The point is, we love the parks, we miss the parks, there’s so many resources out there that you can do at home right now...you can have a #fakeDisneyAnniversary 13/
We bought a soft serve ice cream maker for 50 bucks, and the actual Dole Whop mix Disney uses is thirty dollars for a bag that makes 90 SERVINGS.

It’ll last forever and it’s identical to the park version.

There are virtual ride videos, virtual parades, land-specific music playlists, a lot of snacks from the park are available online, you probably already have shirts and ears.

It’s fun and it’s safe. :)

Anyway, thanks again to everyone who participated in the ‘crowd photos’ and to the friends who sent art and recipes and tips.

It turned out to be one of our best anniversaries ever!
