Orange Cranberry Spiced Granola
So much easier than you think to make: just mix together & bake! And I promise that this will be the best granola you ever eat.

INGREDIENTS
4 cups old-fashioned rolled oats
1-1/2 cups (7 ounces / 190 grams) slivered almonds, or coarsely chopped blanched hazelnuts or pecans

1-1/2 cups (7 ounces / 190 grams) mixed seeds and grains (pumpkin and sunflower seeds, sesame seeds)
1 1/2 – 2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup (185 ml) orange juice from 2 oranges

Zest from 2 oranges
3/8 cup (scant 100 ml) vegetable oil
1/8 cup (25 ml) sesame oil
1/2 cup (125 ml) pure maple syrup, clear liquid honey, or a combination of the two
1 1/2 cups (7 ounces / 200 grams) dried cranberries or cherries
Dried blueberries or MORE

or chopped candied orange peel
Preheat the oven to 325° F (160°C). Line a large baking sheet with oven or parchment paper.
Measure the oats into a large mixing bowl. Add the nuts, the grains and seeds, the spices and the salt, and toss and stir until well combined.

In another bowl, whisk together the orange juice and zest, the oils, and the maple syrup and/or the honey until combined and the zest is no longer in clumps. Pour the liquid ingredients over the oat mixture and stir until very well combined and all of the dry ingredients

are evenly moistened, making sure no pockets of dry ingredients remain. Spread the granola mixture evenly across the lined baking sheet in a uniformly thin layer.
Bake the granola in the preheated oven for 30 - 35 minutes, carefully stirring it up and around every 10

minutes, making sure to push the granola from the outer edges in towards the center to avoid burning. Bake it for a bit less time if you like chewier, moister granola, a bit longer if you like dryer, crispier granola. The granola will continue to dry and clump as it cools

so if in doubt, remove the sheet from the oven sooner than later.
Once removed from the oven, allow the granola to cool completely before pouring into a clean bowl. Add the dried berries or fruit to the granola and toss until the fruit is evenly distributed throughout.

Store in an airtight container such as a lidded preserves jar for up to two weeks.
