Remaining cauliflower is too little to use in anything except Gobi Paratha. So trying @krishashok's method of just mixing atta:water 1:1 by weight and letting it autolyse. I've done autolyse for baking. Why did I never think of doing it for rotis and parathas until #MasalaLab? ImageImage

Definitely easier to knead and roll than my previous paratha flours, @krishashok. Especially for cauliflower, whose texture makes it break the dough somewhere. Gobi paratha are a go. Just grate, spice simply, squeeze out water if there, add salt at the last minute in the filling. ImageImageImageImage
Second paratha is mine. I always like a little bit burntness, be it on my rotis or parathas. 😋😋 ImageImage
What are your standard paratha accompaniments? For me, it's full fat yogurt, Amish butter, mango pickle sauce, and of course, Maggi Hot & Sweet Tomato Chilli sauce (It's different!) Image
In case you've never made stuffed paratha before, you want your dough to be as loose and hydrated as possible.

Almost made it to the end of the semester without a single student getting covid. Almost. 😑😑

One of the most driven, dedicated students I've seen. She's like even if not paper how about zoom? 😳😳 I'm like, daheck? Go rest! Forget the analysis!

I told her to forget course work. Final grade will be based on everything else she's done so far and it's all A. She should set up a call next month or so to show me the analysis. And you can bet she will. She's one of those genuine learning students, not A chasing ones.
Last time she took a course of mine, she took my "if any of you want to pursue marketing analytics further, my door is always open even after the course" to heart and would frequently show up with another such student to discuss analytics for a start-up idea they had.

People, I'm 40 years old. You don't have to tell me about Sachin, Lara, Akram, McGrath, Warne etc etc. I'm just saying that when kids today are 40 years old, Smith, Kohli, Bumrah, Cummins, Shami, Lyon etc will be joining that pantheon too. It's not a zero sum game. #INDvAUS

The blizzard continues, although the winds are mild. A kid out sledding. Manhattan looks gorgeous the morning after (or in this case during) a snow storm. Relishing this beauty after over a year. Last winter was snowless. #NYC
Dunno about elsewhere, but at least in NYC, this has so far been the textbook perfect storm. Not too windy or cold. Nice enough to walk outside. Snow totals in that ideal 8-12 inch range. Looks, feels like a christmas movie but the streets & trains are safe and unaffected.
Upstate however is a different story. Way more snow! Got this picture from a friend in Ellenville NY with the message "spot the car!" Image

In my cricket watching career, I've never changed my estimation of a player over the years more than Nathan Lyon. 12 years ago I thought him a harmless joke. Now I think of him as the best all-surface test spinner in the world. What a brain. #INDvAUS
Cummins-Lyon is at least as challenging a combination to face as McGrath-Warne, if not a bit more. Maybe a bit more because Lyon is a lot craftier than Warne in my estimation. Warne's strength was the insane turn he got. But you could strategize against him easier than Lyon.
Thing with Warne was, if you survived him in one series, you would likely survive him in subsequent series with roughly similar technique and approach. Lyon keeps evolving. What worked in 2018 against him might not this time.

Ah there comes the predictable Channel 9 old boys bit about lol lol how it is difficult to pronounce Cheteshwar Pujara's first name and lol they nicknamed him Steve. It's not #INDvsAUS without an Aussie commentator being casually racist.
You would think you'd have some respect at least for the guy who beat you last time to learn how to say his name. Not giggle about it on an international broadcast like schoolyard bullies picking on anything in the opposition.
It's not Channel 9 but Fox. Ah, even more on brand then. Murdoch world is known for exoticism in such regards.
