FF7R Producer Kitase and Co-Director Hamaguchi talked a bit about Part 2 during the CEDEC conference! Here's the excerpt's translation.

Kitase mentions for Part 2, they want to deliver something that will live up to everyone's expectations but also throw them off, in a good way.

It took me a while to translate Kitase's quote because I was having trouble finding the right words to translate 「いい意味で裏切る」(literally "a betrayal in a good way"). I interpreted it as surprising the audience by going beyond their expectations but to "throw them off."

Here's the Japanese transcription of that part of his quote: そこには原作知ってるからこそ思ったものを届けられる場合もあれば、もっと「あ、こうなってたんだ」の驚きもあったり、期待に答えるのといい意味で裏切るのとっていうのを原作があるからこそ、そこうまく表現し楽しみに変えられる作品

I'm not quite satisfied with the way I translated the quote, but basically what Kitase is saying is he knows people have expectations. They will try to meet those expectations. However, they will not follow exactly what people think will happen, but they will do it in a good way.

Also, based on what Hamaguchi mentioned in another part of the CEDEC interview, the original game is very long. In order to get the beats correct and also have a realistic portrayal of events, such as characters taking a break, they need to also add story to those parts.

This makes me think that Part 2 will probably cover an even shorter portion of original game events than we might initially think. Just my speculation though (*crosses fingers for past Nibelheim to present Nibelheim story arc*).
